RECIPE
OF THE WEEK

At least once in life we all get to experience the toilet overflowing. We flush it and then stand there and watch it happen, believing all the time that the water really isn't going to go over the edge. Some quick action can prevent an overflow. When you sense it coming, quickly remove the tank lid and reach down and push the flush valve closed. It covers the tennis ball-sized opening in the bottom of the tank. Emergency over! Now all you have to do is unclog the toilet.

VEGETABLE CHILI

You can add left over chopped, cooked Christmas turkey or chicken to ring the changes.

2 tins red kidney beans
1 tin mixed beans (Mayfair or Woolworths)
1 onion, chopped
1 tsp curry powder
1 tsp dried chilli, or to taste
2 zucchini (baby marrows) chopped or cut into rings
1 cup frozen corn
3 cloves of garlic, chopped
1 cup of chopped mushrooms
2 tins crushed tomatoes
2 teaspoons of oregano
Salt to taste
Pepper to taste--the more the better

Preparing this meal is easy. Fry the onions and curry powder lightly to release flavour, add the zucchini and stirfry, then add balance of ingredients and let it simmer. You should cook it for at least an hour until the desired consistency is achieved. Add chopped turkey or chicken if desired. Serve with corn chips, tortillas or roti's, chopped onion and tomoato, green pepper, sour cream or fat free cottage cheese.

COOKING TIPS

  • Double up when making casseroles, stews and minced meat meals.This saves both time and electricity.

  • Make your own salad dressing: proportions are generally 3 parts oil to 1 parrt vinegar or other acid such as lemon juice- ring the changes with fresh herbs, flavoured vinegars or oil, mustards etc.

1. The Cheese Factory, Northumberland Road, Oakdale, Bellville, is a treasure trove of unusual cheeses, both local and imported, at great prices.Look out  for their range of low fat cheeses! They also supply de-boned quail, pasta, coffees etc.
2. Fargo's in Lower Main Road, Salt River,  sells all manner of spices, pappadums, herbs, coconut milk etc.
